Casa Brina Extra Virgin Olive oil is grown high in the Tuscan hills just south of Florence, using the strictest quality standards of the region. Only noble olive varieties, Morellino, Frantoio, Coreggiole and Moraiolo, are used. The precise blend varies each harvest to optimize flavor and finesse. The olives are hand-picked directly off the trees, and after brief air drying, they are crushed and the oil is decanted off. The oil is cold-extracted using only traditional and natural processing methods; no heat or solvents are used. We chose this oil for its flavor. It has the assertive fruity aroma of fresh olives, yet is delicate, complex and harmonious. It is distinctively fruity on the palate with the slight peppery/spicy note typical of fine Tuscan oils. Nothing overpowers: it is balanced, medium-bodied, flavorful and long-finished. Since this is a totally natural oil, some sediment may occur. This won't affect its flavor, but reflects an authentic artisan product without commercial processing. Freshness is key to this oil's character.
